Job Description
- Maintains a favorable reputation of Radisson Blu Hotel at all times.
- Oversee and manage the designated section (e.g., sushi bar, grill, hot section, or cold section) ensuring that all food preparation and production is executed to the highest standards.
- Supervise and train junior chefs and kitchen staff on the section, ensuring proper techniques, efficiency, and consistency in dishes.
- Ensure all food is prepared and plated to the restaurant’s specifications and high standards of presentation.
- Inspect the quality of ingredients and ensure only the best products are used in preparation.
- Ensure proper stock levels and manage food wastage within the section.
- To report for duty punctually, wearing correct uniform and name badge at all times.
- Monitors and controls the cleanliness of the kitchen areas and equipment.
- Makes sure that the correct ordering procedures are followed and that every order is done through a captain order.
- Prepares his working station and mise en place as per daily requirements and par stock lists.
- Checks working set-up and mise en place of his assigned staff and monitors that the stations are in order at all times.
- Controls portion size and presentation, before the dishes are handed over to pass.
- Informs the Sous Chef immediately of any irregularities or problems.
- Records all recipes in his own book.
- Trains kitchen helpers regularly and makes sure that every single “dead period” in the kitchen is used for training.
- Makes full hand-over to responsible supervisor of following shift.
- Carries out any other duty that is assigned by the department.
- Works speedy and efficiently at all times with a Yes I Can! Attitude.
Qualifications
- Minimum of 3-5 years’ experience as a Sr. Chef de Partie 4/5-star hotel or in a recognized Sushi Bar specialized in Japanese cuisine
- Strong knowledge of Japanese culinary techniques and traditional dishes (sushi, sashimi, tempura, etc.).
- Proven experience in managing and supervising kitchen staff in a fast-paced environment.
- Exceptional knife skills and proficiency with Japanese cooking equipment.
- Ability to train, mentor, and lead junior chefs effectively.
- Strong understanding of food safety, sanitation, and kitchen hygiene standards.
- Creative mindset with a passion for Japanese cuisine and innovation.
- Ability to handle high-pressure situations and work in a team-oriented environment.
- Culinary degree or relevant certification preferred.
- Fluency in English; knowledge of Japanese language or culinary terms is a plus.
