Responsibilities:
- Food Preparation:
Prepare and cook seafood dishes according to recipes and menu specifications, ensuring consistent quality and presentation.
- Section Management:
Manage all aspects of the seafood section, including mise-en-place (preparation), cooking, and plating.
- Quality Control:
Maintain high standards of food hygiene and safety, ensuring food is prepared and handled according to regulations.
- Staff Supervision:
Supervise and train junior kitchen staff, including commis chefs, delegating tasks and providing guidance.
- Inventory Management:
Assist with inventory management, ensuring proper storage and ordering of seafood ingredients.
- Cost Control:
Monitor portion sizes and waste, contributing to cost-effective food production.
- Menu Development:
Assist with menu planning and the development of new seafood dishes.
- Cleaning and Sanitation:
Maintain a clean and organized work area, adhering to hygiene and sanitation protocols.
- Health and Safety:
Adhere to health and safety regulations, including those related to food handling and storage.
