Your day to day

Restaurant

Attend the pre-opening briefing, maintain a well-groomed appearance, and ensure all necessary tools are ready for operation. Have thorough knowledge of all F&B standard operating procedures, service quality, product presentation, and offerings. Stay informed about local competition, promotional activities, food trends, seasonal dishes, and restaurant specialties. Be familiar with “du jour” items, unavailable items, and details of menu preparation and presentation. Complete all mise-en-scène and mise-en-place before the shift begins. Clean and polish assigned silverware, cutlery, glassware, and chinaware. Ensure all equipment is in proper working condition and used correctly. Stock the sideboard with condiments, sauces, linens, and necessary service equipment. Inspect and maintain all station furniture. Set up tables and covers according to restaurant standards. Fold napkins into the prescribed, attractive styles. Carry essential tools such as order pads, pens/pencils, waiter cloths, matches, and bottle openers. Ventilate the restaurant by opening windows before service begins Ensure the station is clean, organized, and ready for service. Acknowledge and warmly welcome returning and regular guests. Greet guests upon arrival, present the menu, and inform them of any specials. Accurately take and repeat food and beverage orders to avoid errors. Promote menu items and enhance sales through suggestive selling techniques. Uphold the restaurant’s image by maintaining high standards of guest service. Understand various conference packages and table setting arrangements Be fully knowledgeable about all hotel facilities, services, and current offerings. Handle flagged reservations and special requests appropriately Stay updated on guest arrivals, preferences, dietary needs, and departure schedules Answer guest inquiries regarding hotel amenities and nearby attractions. Maintain detailed awareness or information regarding arrivals, their food and beverage preferences, special needs and expected departures of the day. Maintain confidentiality of guest information at all times Assist guests with any issues related to their stay, ensuring a positive experience Promptly address guest complaints, follow up, and escalate to the outlet supervisor when necessary Review and manage shift reservations with supervisor approval and assign tables accordingly

Room Service

Complete all mise-en-place duties before the start of the shift. Set up trays and trolleys according to service standards. Stay informed about daily specials (du jour items), unavailable menu items, preparation methods, and presentation styles.. Provide warm and courteous service over the phone, taking food and beverage orders using effective sales techniques. Clean and polish assigned silverware, cutlery, glassware, and chinaware. Deliver orders promptly to guest rooms, ensuring quality, accuracy, and a personalized touch. Clear trays and trolleys from guest rooms and floor corridors efficiently Prepare and place complimentary fruit baskets in guest rooms as required Answer room service phone calls promptly—within three (3) rings.. Have thorough knowledge of the room service menu Accurately record food and beverage orders, suggesting additional items to increase sales. Prepare Kitchen Order Tickets (KOT)/Checks and follow up on pending orders. Complete and maintain a summary sheet for each shift Log complaints, delays, and guest suggestions in the room service logbook Record outlet reservations in the reservation register for any closed outlets. Process door knob breakfast or meal orders by creating appropriate KOTs/Checks Maintain the highest standard of courtesy and warmth when speaking with guests

F&B Administration

Perform routine clerical and administrative duties as assigned, including typing, filing, preparing and distributing correspondence, handling mail, and producing required documents.

Provide daily administrative support to restaurant outlets, including managing reservations, processing special orders, and fulfilling guest requests—particularly during holidays and special events Maintain daily, monthly, and annual calendars for Food & Beverage department heads, offering time management assistance as needed. Respond promptly and professionally to inquiries related to programs and events Ensure on-site presence and support during all programs and events Oversee the full planning, production, and execution of assigned events and assist with other special events throughout the year. Manage event budgets and ensure all activities are carried out within approved financial parameters. Secure venues and collaborate with catering teams on all logistical elements including food and beverage, audio-visual setup, staging, and event timelines. Coordinate with the marketing team on event promotion, signage, and the production of marketing materials. Source and negotiate with vendors for event-related services and materials. Conduct research on potential venues and vendors to ensure quality, value, and alignment with event goals.

Maintain cash float & reconcile daily Assure accountability for cash float issued.

RESPONSIBLE BUSINESS

Comply with and ensure adherence to all of the hotel’s policies and procedures Comply with all occupational health and safety policies and procedures Attend all scheduled meetings Possess a thorough knowledge of operations, cashiering and telephone policies and procedures. Ensure that all irregularities are reported to the immediate supervisor. Coordination with the following: Front Office for arrival, departure, VIP information, group information house count. Housekeeping for fresh linen, uniforms, flowers and cleanliness Kitchen personnel for placing and pick up of guest food order. Stewarding for supplies of silverware Bars for beverage requisition Stores for material requisition

PEOPLE

Oversee work performance of new Waiter/Waitress when it comes to servicing, posting to micros, audit and cash balance reporting. Help train new hires on-the-job-trainees (On the Job Training) and cross-trainees in the food and beverage department.

GENERAL

Report for duty punctually in accordance with the weekly schedule. Communicate clearly and effectively with all departments to ensure seamless operations Attend all required meetings, training sessions, and briefings as scheduled.. Proactively identify opportunities to enhance service delivery and improve product offerings to exceed guest expectations. Follow safe work practices at all times and promptly report any Occupational Health and Safety concerns to the direct manager or HR Manager. Ensure the presentation, quality, and portioning of food and beverages consistently meet hotel standards. Provide comprehensive administrative support, including managing reservations, handling special orders, and processing banquet booking requests daily—including during holidays and special events. Ensure all client requests are handled promptly and in line with service standards Maintain a professional, clean, and organized work environment at all times. Support guest satisfaction efforts by responding to feedback and continuously improving service Maintain accuracy in all tasks, including cash handling and financial transactions Demonstrate a high standard of personal presentation and a strong commitment to the company’s core values.  

PERSONAL ATTRIBUTES

Education

Bachelor Degree in Hotel and Restaurant Management or Tourism or any Formal hospitality qualifications, desirable

 Experience

At least 1 years previous food and beverage experience in a hotel or any 5 star restaurant back ground.   Technical/ Skills Competent Word, Excel, Cashiering, operate Micros system and hotel PMS Competent Oral and Written English Communication Skills Strong organisational and work co-ordinating skills to handle multiple assignments and projects Possess a clear diction and a pleasant voice
